Chicken & Onion Braise Recipe
Ingredients
1 medium-size onion, chopped
3 tablespoons salad oil
1 broiler-fryer cut in serving-size pieces
1/2 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, minced
1 can (about 1 pound) tomatoes
1 tablespoon vinegar
1/2 teaspoon rosemary
1/2 teaspoon sugar
Directions
1. Saute onion in 1 tablespoon salad oil in large frying pan about 5 minutes; remove and save for Step 3.
2. Sprinkle chicken with salt and pepper; brown in same frying pan with remaining 2 tablespoons oil and garlic.
3. Return onion to pan; add remaining ingre dients; cover tightly. Simmer 40 minutes, or until chicken is tender.
