Chicken Okra Gumbo Recipe
Ingredients
| Butter | 2 Tablespoon | |
| Chicken | 1 Pound, cut into pieces | |
| 1 1/2 to 2 pounds ham slices, cut into 1-inch cubes | ||
| Onion | 1 , chopped | |
| 1/2 pod hot red pepper, seeded | ||
| 1 sprig thyme or parsley, chopped | ||
| Tomatoes | 6 Large, chopped | |
| Okra | 1 Quart, sliced | |
| Boiling water | 3 Quart | |
| Bay Leaf | 1 | |
| Rice | 2 1/2 Cup (16 tbs), boiled | |
| Salt and cayenne pepper to taste | ||

Directions
1. Heat the butter in a heavy kettle or Dutch oven, add the chicken and ham and cook, covered, about ten minutes.
2. Add the onion, red pepper, thyme and solid part of the tomatoes, reserving the juice. Simmer a few minutes, stirring often.
3. Add the okra and simmer, stirring, until brown.
4. Add the reserved tomato juice, the boiling water and bay leaf. Season with salt and cayenne and simmer, covered, about one hour.
