Chicken Monte Cristo Recipe
Ingredients
| 6 (4-ounce) skinned, boned chicken breast halves | ||
| Pepper | 1/4 Teaspoon | |
| Ham slice | 3 | |
| Processed cheese slice | 3 | |
| 2 egg whites, lightly beaten | ||
| 1/2 cup Italian-seasoned breadcrumbs | ||
| Vegetable cooking spray | ||
Directions
Take 2 sheets of heavy-duty plastic wrap and place chicken between them. Flatten to the chicken to 1/4 inch thickness, using a meat mallet or rolling pin.
Sprinkle chicken with pepper.
Cut each ham slice and cheese slice in half.
Place 1 piece of ham and 1 piece of cheese on each chicken breast.
Roll up chicken lengthwise, tucking ends under; secure with wooden picks.
Dip chicken rolls in egg white, and dredge in breadcrumbs.
Place on a baking sheet coated with cooking spray.
Bake at 375° for 25 minutes or until chicken is done.
Transfer to a serving platter, and remove wooden picks.
