Ingredients
1 teaspoon olive or canola oil
2 green onions, including tops, finely chopped
1 clove garlic, minced
1 teaspoon each unsweetened cocoa powder and chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 can (8 ounces) low-sodium tomato sauce
1 tablespoon raisins
1 tablespoon slivered almonds or hulled pumpkin seeds
1/4 cup water
2 tablespoons minced fresh cilantro (coriander) or 2 tablespoons minced parsley plus 1 teaspoon dried cilantro
4 skinned and boned chicken thighs (4 ounces each)
Directions
1 Preheat the oven to 400° F.
