Directions

MAKING
1) Take a pan and add 2 tablespoons of butter.
2) Add 1/2 yellow chopped onion and a pinch of salt. Sauté for two minutes to make the onion brown in color.
3) Meanwhile, grate 2 ounces bitter-sweet chocolate.
4) Add 1 teaspoon of cinnamon to this chocolate.
5) Mince 3-4 cloves of garlic.
6) Take one orange and extract juice from it.
7) Take 1 1/2 cups of chicken stock and add the extracted orange juice.
8) Take a deep pan and heat chicken orange stock on medium heat.
9) Now add minced garlic, 2 teaspoons coriander seeds, 2 teaspoons of cumin seeds, and 1/4 chopped raw almonds or peanuts to the browned onion.
10) Heat for 2 minutes until the nuts are browned.
11) Chop 2 canned chipotle peppers and 1 teaspoon ancho
(negro) chili powder. Add this to onion mixture.
12) Heat for another 2 minutes and then add chicken orange stock.
13) Boil for 1-2 minutes and then add 1 teaspoon oregano, orange zest and 1/4 coconut milk.
14) Kill heat and then add chocolate.
15) Allow to stand for 2 minutes.
16) Stir the mixture and then transfer to the large sauce pot.
17) Mix with hand blender to make the mixture smooth.
18) Top warm flour tortilla with rice, chicken, mole sauce and then wrap the tortilla.

SERVING
19) Serve the dish in a serving plate.
