Chicken Marengo With Mushrooms Recipe
Ingredients
| 2 pounds breast of chicken, boned, skinned and cubed | ||
| Onion | 4 Ounce, sliced | |
| 2 cups chicken bouillon | ||
| Mushrooms | 1 Cup (16 tbs), sliced | |
| 2 ripe medium tomatoes, sliced | ||
| 1/2 teaspoon sherry or other wine extract | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In non-stick skillet, sear chicken on all sides, add onion and brown it too.
Pour in chicken bouillon and sprinkle with salt and freshly ground pepper.
Add the mushrooms and tomatoes.
Cover pan tightly and let simmer gently for about an hour.
Stir in wine extract just before serving
