Chicken Livers With Pears Recipe
Ingredients
4 tablespoons butter
1 1/2 pounds chicken livers, cleaned and dried well
1 large pear, peeled, cored, and sliced
1 medium onion, finely chopped
Salt and fresh pepper
2-3 tablespoons pear vinegar or other vinegar (such as cider vinegar)
2 tablespoons finely chopped parsley
Directions
Melt butter in a skillet.
When hot, add the livers.
Do not move them around.
Cook 3 minutes.
Turn over and cook 3 minutes longer or until no longer red.
They should be just pink.
Remove to a platter and keep warm.
Add the pear and onion and cook until barely tender, 3-5 minutes.
Add the livers to the onion-pear mixture and season to taste.
Stir to mix well.
Add the vinegar, bring to a boil, sprinkle the parsley on top, and serve.
