1 to 1 1/2 pounds chicken livers
1/2 pound fresh mushrooms, thinly sliced
1/4 cup grated onion
2 tablespoons chopped parsley
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup burgundy
1/4 cup butter
6 slices toast or 3 English muffins, split and toasted
Directions
1. Dice livers coarsely. Combine with mushrooms, onion, parsley, salt, pepper, and wine in a large plastic bag. Marinate in refrigerator overnight.
2. In a 2-quart glass casserole, heat butter 30 to 45 seconds. Add chicken-liver mixture.
3. Cook, uncovered, 6 to 8 minutes, stirring every 2 minutes. Cover casserole and cook 3 to 4 minutes more.
4. Spoon onto toasted bread or muffins arranged on serving platter.
