3 tablespoons butter
 
1 small onion, finely chopped
 
1 pound chicken livers
 
2 hard-cooked eggs, chopped
 
Salt and freshly ground black pepper to taste
 
1 tablespoon chopped parsley
 
1/4 teaspoon dried tarragon

Directions

1. Melt the butter in a heavy skillet and saute the onion in it until tender. Add the chicken livers and cook quickly until browned and tender. (The chicken livers will still be a little pink in the middle.) Chop finely, or grind in a meat grinder or food processor.
2. Add the remaining ingredients and mix well.
