Chicken Liver Soup Recipe

Ingredients
3 cups chicken broth
1 cup beef broth
3 tbsp brown rice
4 oz chicken livers
2 tsp olive oil
1 garlic clove, chopped
2 tbsp onion, chopped
1/2 tsp coriander, chopped
Dash of Worcestershire sauce
Sea salt
Fresh ground pepper
Directions
In a saucepan, bring both broths to a boil.
Add rice.
Simmer 10 minutes or so.
Meanwhile, trim chicken livers, removing all fat.
Cut livers into 4 pieces.
Set aside.
In a skillet, heat oil.
Sear chicken livers 4 minutes.
Stir in garlic, onion and coriander.
Continue cooking 3 minutes or so.
Add liver mixture to broth.
Simmer 10 minutes.
Season with Worcestershire sauce, salt and pepper.
Add rice.
Simmer 10 minutes or so.
