Chicken Liver Pie Recipe

Ingredients
Pie Dough:
1 cup flour
1/2 teaspoon salt
4 ounces butter
1 egg yolk
1/2 tablespoon water
Filling:
3/4 pound chicken liver
1 (1-pound) can crushed tomatoes
1 tablespoon flour
1 small green pepper, cut in strips
3/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon crumbled marjoram
3/4 pound bacon
Directions
1. Combine flour and salt. Rub in butter with finger tips, add egg yolk and water and work together quickly. Place in a cool place to rest, about 30 minutes.
2. Roll dough out about 1/8 inch thick and line the bottom and the sides of an ovenproof dish with it. Bake in oven at 350° for about 20 minutes.
3. Pour crushed tomatoes in a saucepan and thicken with flour. Boil for about 3 minutes. Stir in the green pepper, saving some for decoration, and season.
4. Cut the chicken livers in small pieces and lightly fry in butter for 3-5 minutes. They are then still light rosy inside.
5. Stir the liver into the tomato mixture.
6. Fry the bacon till crisp.
7. Pour the liver and tomato mixture in the warm pie crust and sprinkle with the bacon and the pepper strips.
