Ingredients
1 head Boston lettuce
2 tbsp (30 ml) olive oil
1 lb (500 g) fresh chicken livers, cleaned, halved and fat trimmed
2 garlic cloves, smashed and chopped
1 onion, thinly sliced
3 anchovy filets, chopped
2 tbsp (30 ml) capers
1/4 tsp (1 ml) sage
1 1/2 cups (375 ml) chicken stock, heated
1 tbsp (15 ml) cornstarch
3 tbsp (45 ml) cold water
Salt and pepper
Directions
Wash and dry lettuce; arrange leaves like baskets on four individual plates.
Set aside.
Heat oil in frying pan.
Cook livers, garlic and onion 3 to 4 minutes over medium heat; season well.
Stir in anchovies, capers and sage; continue cooking 1 minute.
Pour in chicken stock and bring to boil.
Mix cornstarch with water; incorporate into sauce and cook 1 minute over low heat.
Set aside.
