1 tablespoon lime juice
 
1 tablespoon adobo or taco seasoning
 
1 teaspoon olive oil
 
1 package PERDUE® Fit n Easy fresh skinless and boneless pick of the chick
 
1 pound small potatoes, peeled
 
3/4 pound onions, peeled and sliced
 
1/3 cup low sodium chicken broth
 
1 bay leaf
 
1 package frozen tiny green peas

Directions

To Microwave: In 3-quart microwave-safe dish, stir lime juice, adobo seasoning and olive oil until blended.
Coat cliicken with lime mixture and arrange in circle on bottom of dish.
Arrange potatoes and onions on top; add broth and bay leaf.
Cover with vented plastic wrap; microwave at HIGH (100% power) 3 minutes.
Reduce power to MEDIUM-HIGH (70% power); microwave 8 minutes, stirring twice.
Add peas; cover and microwave at MEDIUM-HIGH 8 minutes longer or until chicken is cooked through.
Remove and discard bay leaf.
Let stand, covered, 15 minutes before serving.
