Chicken Kebabs Recipe
Ingredients
Marinade
1/2 Cup (125 ml) oil
1/4 Cup (60 ml) soy sauce
1/4 Cup (60 ml) honey
2 tbsp (30 ml) lemon juice
1 tsp (5 ml) grated lemon peel
1 tsp (5 ml) minced garlic
Chopped parsley
1 1/2 lbs (675 g) chicken breasts, cubed
8 canned or cooked small potatoes
8 mushroom caps
16 sweet red pepper wedges
16 green bell pepper wedges
16 onion wedges
Directions
– In a large bowl, combine all marinade ingredients, add cubed chicken breasts and let marinate for 4 to 6 hours, stirring from time to time.
– Slide cubed chicken onto skewers, alternating with vegetables.
– Place skewers on a micro wave-safe platter and cook chicken kebabs in micro wave at MEDIUM-HIGH for 10 to 12 minutes. Let stand
5 minutes.
– Garnish each chicken kebab with parsley and chives.
