Chicken In Wine Recipe
Ingredients
1 frying chicken cut in serving size pieces
1 clove garlic, halved
1 teaspoon salt
1 tablespoon lemon juice
1/4 cup dry white table wine
1 bay leaf
3 tablespoons olive oil
1 tablespoon flour
1/4 cup each chopped onion and green pepper
1 cup diced carrot
1/2 cup sherry
Directions
Rub chicken with the cut clove of garlic and the salt.
Mix together a marinade of the lemon juice, white wine, and bay leaf; add chicken pieces and let stand at least 2 hours.
Remove chicken and pat dry; reserve the marinade.
Brown chicken on all sides in hot oil.
Transfer browned chicken to a 2-quart casserole.
Blend flour into the drippings, stirring until smooth.
Add onion, green pepper, carrot, and the marinade, and heat thoroughly; pour mixture over chicken.
Add sherry.
Bake in a moderate oven (350°) for 40 minutes, or until chicken is tender.
Remove bay leaf before serving.
