Chicken In The Pot Recipe

Ingredients
1 tbsp butter
2 onions, minced
1 celery stalk, diced
Salt and pepper
1 2 1/2-3 lb chicken, prepared
1 1/2 cups chicken broth, heated
Parsley, chopped
Directions
In a large stove top casserole dish, melt butter.
Cook onion and celery until tender but not browned.
Meanwhile, season chicken cavity with salt and pepper.
Place chicken over vegetables.
Pour in broth.
Cover.
Over low heat, cook 2 hours.
If needed, add more broth so liquid does not reduce.
Sprinkle with parsley 15 minutes before the end of cooking.
Remove chicken and vegetables from casserole dish.
Drain well.
On a serving dish, arrange chicken on a bed of vegetables.
Surround with diced turnip and carrots, if desired.
