Chicken In Saffron Cream Recipe

6 tablespoons butter
 
2-2 1/2 pounds frying chickens, cut up
 
Salt and fresh pepper to taste
 
1 large tomato, peeled, seeded, and finely chopped
 
1/2-1 teaspoon saffron
 
1 1/2 cups heavy cream
 
2 tablespoons finely chopped parsley

Directions

Melt the butter in a skillet.
When hot and foaming, brown the pieces of chicken, 5 minutes on each side.
Season with salt and pepper.
Pour off the fat.
Add the tomato.
Add the saffron to the cream and pour over the chicken.
Cover and simmer 20 minutes.
Stir frequently.
Sprinkle with parsley.
