Ingredients
2 tbs (30 ml) curry powder
1 tbs (15 ml) ground coriander
2 tsp (10 ml) paprika
1/2 tsp (3 ml) turmeric pinch salt
4 tsp (20 ml) Thai Oil
4 free-range chicken breasts, skinless
2 tbs (30 ml) Unrefined Peanut or Sesame Oil
1 small onion, minced
1 tbs (15 ml) fresh ginger, minced
2 cloves garlic, minced
1 cup (240 ml) water salt, to taste fresh ground pepper, to taste
Directions
Combine curry powder, coriander, paprika, turmeric and pinch of salt in a 2-quart bowl.
Whisk in Thai oil.
Add the chicken breasts and coat them evenly.
Cover and refrigerate for at least 30 minutes.
In a large skillet, heat peanut oil.
Add onion and saute 3 minutes.
Add ginger and garlic.
Cook 2 minutes more.
Add the chicken breasts and the marinade.
Add water, cover and simmer 4 minutes.
