Chicken In Cantaloupe With Curry Dressing Recipe
Ingredients
| 2 medium-size cantaloupes | ||
| 2 to 3 cups cold cooked chicken, cut in bite-size pieces | ||
| 1/4 cup each thinly sliced celery and green onion | ||
| 1/4 cup seeded and diced red or green bell pepper | ||
| Lettuce leaves | ||
| Salted peanuts | 1/4 Cup (16 tbs), chopped (Curry-peanut dressing) | |
Directions
Cut each cantaloupe in half; scoop out and discard seeds.
Remove melon fruit with a melon ball cutter leaving about 1/4 inch of the fruit next to the rind.
Set melon balls and hollow shells aside to drain.
Mix together chicken, celery, onion, and pepper.
Prepare curry-peanut dressing and stir into chicken mixture along with melon balls.
Cover and refrigerate.
