Directions
1. Arrange split chickens, skin-side down, in a large, shallow, baking pan. Mix the onion, soy sauce and water in a small bowl; pour over chicken.
2. Bake in moderate oven (350°) 30 minutes, then turn. Continue baking, basting several times with soy mixture in pan, 30 minutes longer, or until richly browned and tender.
3. Drain pineapple slices well on paper toweling; roll edge of each in chopped parsley. Serve with chicken.
