Chicken Florentine Recipe
Ingredients
| Chicken pieces | 4 | |
| Flour | 3 Tablespoon, seasoned | |
| Butter | 3 Ounce | |
| Spinach | 1 pound | |
| Plain flour | 1/2 Ounce | |
| Cream - 3-4 tablepsoons | ||
| Paprika and mace - a pinch | ||
| Italian cheese - 2-3 grated | ||
| Breadcrumbs | 2 Tablespoon | |
Directions
GETTING READY
1) In seasoned flour, roll chicken piece.
2) Cook the spinach. Drain the leaves and chop.
3) Butter a fireproof dish.
MAKING
4) In 1 1/2 oz hot butter, fry chicken pieces until golden brown, about 10 minutes.
5) In spinach, add 1 oz butter. When melted, sprinkle in flour.
6) Bring to a boil; then add cream and seasoning, with a dash of paprika.
7) Pour this into buttered fireproof dish.
8) Place chicken pieces on top.
9) Mix cheese and breadcrumbs together, and sprinkle thickly over top of chicken.
10) Sprinkle remaining butter over the top.
11) Cook in oven for about 25-30 minutes, or until the topping is crisp and brown.
SERVING
12) Serve the chicken Florentine with salad.
