Chicken Cutlets
1 lb (450 g) uncooked chicken, chopped
1 onion, chopped
2 tbsp (30 ml) chopped parsley
6 tbsp (90 ml) milk
3/4 Cup (180 ml) breadcrumbs
2 eggs
2 garlic cloves, minced
Salt and pepper
2 eggs, beaten
2 Cups (500 ml) bread crumbs
1/4 Cup (60 ml) butter
Directions
– Preheat oven to 375 °F (190 °C).
– In a large bowl, combine all chicken cutlet ingredients and add breadcrumbs to thicken batter.
– Shape cutlets according to illustrated step-by-step instructions. Refrigerate for a few hours.
– Dip each cutlet into eggs and coat with breadcrumbs.
– In a skillet, melt butter and cook chicken cutlets over very low heat for 3 minutes on each side until golden.
