Chicken Curry Souffles Recipe

Ingredients
3 eggs, separated
1 cup cream-style cottage cheese
1/4 cup finely chopped onion
1 clove garlic, minced
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/2 cup milk
1 cup coarsely chopped cooked chicken or turkey
Directions
Beat egg whites till stiff peaks form; set aside.
In another bowl beat together egg yolks and cottage cheese.
In a heavy saucepan cook onion and garlic in butter or margarine till onion is tender but not brown.
Combine flour, curry, salt, and ginger; add to butter mixture, mixing well.
Add milk all at once.
Cookandstirtill thickened and bubbly.
Stir half the hot mixture into egg yolk mixture; return to pan.
Cook and stir till thickened.
Remove from heat; stir in chicken.
Fold in beaten egg whites.
Turn mixture into four 8-ounce casseroles (or individual souffle dishes with foil collars).
Bake, uncovered, at 300° till a knife inserted off-center comes out clean, 40 to 45 minutes.
