Creamy Chicken Croquettes Recipe
These chicken croquettes are lovely fried croquettes made with cooked chicken. Seasoned with parsley and worcestershire sauce for flavor, the croquettes are spiced with nutmeg and deep fried to serve.
Ingredients
1 cup thick Cream Sauce
1/4 teaspoon grated onion
1 teaspoon Worcestershire sauce
2 egg yolks, lightly beaten
2 cups cooked chicken, finely chopped
Flour
1 egg, well beaten
2 tablespoons chopped parsley
Dry bread crumbs
Fat for deep fat frying
1/2 teaspoon nutmeg
Directions
While Cream Sauce is still hot, stir it, a little at a time, into the egg yolks.
Add chicken, parsley, nutmeg, grated onion, and Worcestershire sauce and blend thoroughly.
Chill in a shallow baking dish.
Divide mixture into 12 sections and shape into balls.
Dip into flour, then into beaten egg, and finally into dry bread crumbs.
Preheat deep fat to 375° to 385° or until a 1 inch cube of bread browns in 60 seconds.
Fry croquettes, a few at a time, for 2 to 3 minutes or until golden.
Drain on paper towels.
