Ingredients

 
4 eggs
 
1/2 c. milk
 
1/2 c. chicken stock
 
2 T. butter, melted
 
1/2 tsp. salt
 
1 c. flour, sifted

Directions

Beat eggs in large mixing bowl.
Add milk, chicken stock, melted butter and salt.
Beat on medium speed, gradually adding flour.
Let batter stand for 1 hour.
Heat a 7-inch skillet or crepe pan until moderately hot, then film with butter, using a brush or folded paper towel.
Using a ladle or small cup, pour batter into pan, then quickly tilt the pan about so the batter spreads evenly in the thinnest possible layer.
Cook for a few more minutes, until bottom is lightly browned and edges lift easily from the pan.
The crepe should then slide loosely about in the pan.
Turn with spatula.
Cook the second side for a few minutes.
Remove to plate and cook next crepe.
Crepes freeze very well simply stacked and wrapped in foil with edges tightly sealed.
Defrost at room temperature before separating.
After making crepes, either keep in refrigerator or freezer until ready to fill.
