Chicken Creole Recipe
Ingredients
| Butter/Margarine | 2 Tablespoon | |
| Ready-to-cook broiler-fryer- 3 to 3 1/2-lb, cut in serving pieces | ||
| Onion | 1 Cup (16 tbs), sliced | |
| Garlic | 2 Clove (5gm) | |
| All-purpose flour - 2 tablespoons | ||
| Tomatoes | 1 Can (10oz) | |
| Dried thyme leaves | 1 Teaspoon | |
| Parsley | 2 Teaspoon, chopped | |
| Bay leaves | 2 | |
| Salt | 1 1/2 Teaspoon | |
| Hot red-pepper sauce - 1/4 teaspoon | ||
| Green pepper | 3 Cup (16 tbs), chopped | |
Directions
MAKING
1. In large skillet add butter and melt. Add chicken and saute till the chicken turns golden brown. Slowly remove the pieces as they brown.
2. In the skillet add onion and garlic. Saute for 5 minutes till the ingredients are soft.
3. Add flour, and blend till a smooth consistency.
4. Add thyme, tomatoes, parsley, bay leaves, salt and red-pepper sauce. Combine the chicken pieces.
5. Cook over low heat for 15 minutes keeping the skillet covered.
7. Add green pepper. Cook for 30 minutes keeping the skillet covered till the chicken is tender.
SERVING
8. Serve Chicken Creole garnished with parsley.
