Chicken Cordon Bleu Recipe

6 boned chicken breasts w/skin
6 thinly sliced pieces cooked ham
6 thin slices Monterey Jack cheese
2 Tbsp. flour
1/4 cup butter
1/4 lb. grated Mozzarella cheese
1/4 cup milk
8 medium sliced mushrooms
1/2 cup dry white wine
Directions
Flatten chicken breasts until thin.
Place ham and cheese slice on each (cheese tucked inside).
Roll and pin edges together with a toothpick.
Dust with flour on each side.
In a 10-inch glass skillet, melt butter (high) 45 seconds.
Coat chicken sides with butter.
Arrange large ends toward outside of dish.
Microwave (high), covered, 6-8 minutes.
Turn chicken over with large sides near edge.
Rotate dish 1/4 turn.
Microwave (high), covered, 8-10 minutes.
Rest 10 minutes.
Remove chicken from dish; blend in cheese and milk.
Microwave (high) 1-1 1/2 minutes, stirring often until boiling.
Add mushrooms and wine, blending until smooth.
Pour over chicken.
