 Garlic1 Teaspoon, minced (Sauce)
 Ginger1 Teaspoon, minced (Sauce)
 Red pepper1/2 Teaspoon, crushed (Sauce)
 2 tablespoons Chinese preserved black beans, rinsed, drained, and coarsely chopped
 Rice noodles1 pound (Sauce)
 1/4 pound snow peas, ends removed, cut in half diagonally
 2 green onions, cut into 1-inch pieces

Directions

1. Combine the marinade ingredients in a medium bowl. Skin the chicken and slice it thinly. Add it to the marinade, stir to coat, and set it aside for 30 minutes. Combine the sauce ingredients in a small bowl; set aside.
2. Place a wok or wide frying pan over high heat until hot. Add the oil, swirling to coat the sides. Add the garlic, ginger, red pepper, and black beans and cook until fragrant, about 10 seconds. Add the chicken and stir-fry until opaque, about 2 minutes. Reduce the heat to medium. Add the noodles, snow peas, and green onions. Cook, stirring, for 1 minute. Add the sauce and stir for 1 minute or until well combined.
