Directions

MAKING
1. Heat a pan with olive oil and fry the onions in it.
2. Saute the onions for 2 minutes.
3. Add the garlic and stir fry for 1 minute.
4. Drop the bell peppers and continue to sauté.
5. Sprinkle chili powder, cumin, oregano, cayenne, and pepper flakes over it.
6. Add chipotle pepper sauce and sauté for 1 minute.
7. Add the whole tomatoes from the can into it. Break the tomatoes with the spatula.
8. Add the chopped tomatoes next into it. Stir it around.
9. Pour the broth into it.
10. Sprinkle the salt and pepper over it and stir around.
11. Cook uncovered over simmer for 30 minutes.
12. Add the chicken into it.
13. Add rinsed cannellini bean into it.
14. Put basil on the pan and stir well.
15. Cook uncovered over simmer for 20 minutes.

SERVING
16. Dish it out into a plate and garnish with grated cheddar cheese and chopped scallions.
17. Top with cool avocado dipped in lime juice and salt.
