1 chicken or boiler, jointed
 
2 sticks celery, chopped
 
3 Tbs. flour
 
2-3 carrots, sliced
 
2 tsp. salt
 
2 Tbs. tomato paste
 
Pinch of pepper
 
1/2 pt. water or stock
 
1-2 oz. fat
 
8 oz. rice
 
12 small onions

Directions

Dredge the pieces of chicken with the flour and seasoning.
Fry in the fat until brown.
Place in a casserole with the onions, celery, and carrots.
Add the tomato and liquid.
Cover and cook slowly until tender.
