 3 Pounds Frying Chicken, Cut Up 1/2 Cup Chopped Onion 1/4 Cup Chopped Green Pepper 1/2 Cup Chopped Celery
 1 28-Ounce Can Tomatoes 1/2 Teaspoon Salt
 Garlic1 Clove (5gm), minced
 1 Teaspoon Parsley Flakes Dash Oregano
 1 Tablespoon Cornstarch 1/4 Cup Water

Directions

1. Brown pieces of chicken in skillet sprayed with vegetable pan spray.
2. Add vegetables, salt, and spices. Cover and simmer 1 hour.
3. Mix cornstarch with water and add to skillet, stirring until gravy thickens.
