Chicken Cacciatore Recipe
Chicken cacciatore is a mixed chicken and vegetable preparation made with tomato sauce. Herbed and cooked with garlic for flavor, the chicken cacciatore can be served over rice with noodles or as desired.
Ingredients
| Young chicken | 1 Pound, pounded | |
| Salad oil | 1/3 Cup (16 tbs) | |
| 2 medium onions, cut in 1/4 inch slices | ||
| Tomatoes | 1 1 pound | |
| Seasoned tomato sauce | 1 8 Ounce | |
| Garlic | 2 Clove (5gm), minced | |
| Salt | 1 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Celery seed | 1/2 Teaspoon | |
| 1/2 teaspoon oregano or sage | ||
| Bay leaves | 2 | |
Directions
Brown chicken in hot salad oil, then remove.
Add onions and cook over low heat or coals till golden but not brown.
Drain off excess fat.
Add remaining ingredients.
Add chicken and simmer covered 15 minutes; uncover and cook, turning chicken in sauce occasionally, till chicken is tender and sauce is thick (consistency of catsup), about 45 minutes to 1 hour.
Skim off excess fat and remove bay leaf before serving.
