Ingredients

 Chicken 3 Pound, quartered
 Onion1 Small, separated into rings
 Green pepper1/2 Medium, cut into strips
 Whole tomatoes1 Can (10oz)
 Mushroom Sauce
 Cornstarch2 Tablespoon
 Water1/4 Cup (16 tbs)
 Sugar1 Teaspoon
 Salt1/2 Teaspoon
 2 cups reserved chicken broth
 Mushroom1 Can (10oz), drained

Directions

1 Arrange chicken pieces, skin-side-up and thick edges toward outside, in 12 x 7-inch glass baking dish. Place onion, green pepper and tomatoes over chicken. Cover with wax paper.
2 Microwave 35 to 40 minutes on HIGH, or until meat cut near bone is no longer pink (about 180°F). Drain, reserving 2 cups broth; set aside. Let stand, covered, 5 minutes before serving. Mushroom Sauce: Combine all sauce ingredients, except mushrooms and broth, in 4-cup glass measure; beat with rotary beater until smooth. Beat in reserved broth. Microwave 2 to 3 minutes on HIGH. Beat; add mushrooms and continue cooking 2 to 5 minutes on 7 (MED. HIGH), or until thickened (about 200°F). Stir well and pour over chicken to serve. 4 to 6 Servings
