6-8 cups strong chicken broth
 
4-6 eggs
 
1 cup heavy cream
 
2 tablespoons chopped chervil
 
Salt and fresh pepper to taste
 
1/4 cup grated Parmesan cheese

Directions

Place broth in a saucepan and bring to simmer.
Poach eggs while broth is simmering.
Place an egg in each serving bowl or cup.
Add cream to broth.
Bring to a boil.
Gently spoon the broth and cream over the eggs.
Sprinkle each serving with chervil, salt and pepper, and Parmesan cheese.
