Chicken Broth Recipe
Ingredients
2 lb. chicken, cut up
1/2 med stalk celery, chopped
8 to 10 green onions, chopped
2 tsp parsley, chopped
2 tsp salt
1 tsp thyme
1 tsp marjoram.
1/2 tsp pepper
Directions
Wash chicken pieces; place in large kettle.
Cover with 2 qt. (2 L) water; bring to boil, cover and cook 1 hour or until chicken is tender.
Add remaining ingredients; simmer 1 hour.
Remove chicken; strain broth.
Refrigerate broth overnight.
Remove all fat from surface before reheating broth.
Cover with 2 qt. (2 L) water; bring to boil, cover and cook 1 hour or until chicken is tender.
