Chicken Breasts With Wild Rice Recipe
Ingredients
| 1 1/2 cups wild rice, soaked overnight in cold water to cover | ||
| 4 (4-ounce) boneless chicken breast halves, skin on | ||
Directions
TO PREPARE THE WILD RICE: Bring 2 quarts of water to a rapid boil.
Dram the wild rice and add to the pot.
Let the wild rice simmer freely for 15 to 20 minutes, or until it is tender but still has a little crunch.
Check for doneness after 15 minutes.
Drain and keep warm, or cover the drained rice and reheat in the top of a double boiler just before serving.
TO PREPARE THE CHICKEN: Preheat the broiler.
Broil the chicken breasts for 3 to 4 minutes on each side.
When they are done, remove the skin. (Cooking them with the skin on seals in flavor and keeps them from drying out.)
