Ingredients
1 tbsp (15 ml) butter
1 onion, finely chopped
1 green bell pepper, finely chopped
1 sweet red pepper, finely chopped
1 garlic clove, minced
2 Cups (500 ml) chicken stock or consomme
4 boned chicken breasts
6 oz (170 g) each
Pinch of thyme
1 bay leaf
Salt and pepper
2 tsp (10 ml) chopped parsley
Directions
– In a medium-size saucepan or stove-top casserole dish, melt butter, add onion and peppers, cover and simmer, without browning, over low heat. Add garlic and stir. Add chicken stock. Place the chicken breasts in the saucepan and bring to a boil.
– Add thyme and bay leaf, and season with salt and pepper. Cover and cook over low heat for about 20 minutes.
– When cooked, arrange chicken breasts on a serving dish. Top each portion with peppers and onions. Ladle chicken stock over the chicken, sprinkle with parsley and serve.
