4 chicken breasts, boned, cut in half
2 cups (500 mL) crustless bread, diced
1 tsp (5 mL) tarragon or thyme
1 tsp (5 mL) salt
1/4 tsp (1 mL) pepper
1/2 tsp (2 mL) garlic, crushed
1/3 cup (80 mL) walnuts or pecans, chopped
1/2 cup (125 mL) sultana raisins
3 tbsp (50 mL) melted butter
2 apples, peeled and grated
1/2 cup (125 mL) apple juice
Grated rind of 1 lemon
3 tbsp (50 mL) soft butter
Directions
€¢ Wipe the boneless chicken breasts with a cloth dipped in port wine or orange juice.
