Chicken Breasts All Alba Recipe

Ingredients
2 whole chicken breasts, boned and halved
Flour for dredging
2 tablespoons butter
Salt and freshly ground black pepper
Slices of white or black truffles, or 4 sliced mushrooms sauteed in a little butter
4 slices Fontina or mozzarella cheese
Directions
1. Remove and discard skin from chicken breasts. Place the chicken breasts between pieces of waxed paper and pound until thin.
2. Dredge the chicken with flour. In a skillet heat the butter, add the chicken and cook until tender, five to six minutes on each side. Remove to a shallow pan and sprinkle with salt and pepper. Arrange on each breast half a dozen small slices of truffles or mushrooms and cover with a slice of cheese.
3. Place the chicken breasts under a hot broiler just long enough to melt the cheese.
