Chicken Breasts Recipe
Ingredients
2 raw chicken breasts
Pinch salt
Tiny pinch pepper
4 oz. self-raising flour
1/2 beaten egg
1/2 pint (U.S. 1 1/4 cups) water
Peanut oil
Lemon wedges
Directions
Trim the chicken breasts and rub the salt and pepper well into them.
Dust them with a teaspoon of the flour and set them aside for the moment.
Make a batter by gradually adding the beaten egg and water to the remaining flour.
In a deep pan heat enough oil in which to fry the breasts.
Dip them in the batter, drain and brown on both sides in the oil (about 2 minutes).
Cut each piece across into slices, arrange on a heated serving dish and garnish with the wedges of lemon.
