Chicken Breast With Rice Primavera Recipe

Chicken breasts with rice primavera is a vegetable and rice chicken recipe. Cooked and broiled, the chicken breasts with rice primavera is flavored with italian dressing and has basil for a fresh and light taste to it.

Ingredients

 
1 Tbsp. butter or margarine
 
1 small zucchini, diced
 
1 small yellow squash, diced
 
2 c. water
 
1 pkg. rice and chicken flavored sauce
 
1 small tomato, chopped
 
4 boneless, skinless chicken breast halves
 
1/4 c. olive oil classic Italian dressing
 
2 Tbsp. chopped fresh or 1 tsp. dried basil leaves

Directions

In medium saucepan, melt butter over medium high heat and cook zucchini and yellow squash for 3 minutes, stirring frequently, or until almost tender.
Add water, rice and chicken flavored sauce and tomato.
Bring to a boil, then reduce heat.
Simmer, uncovered, stirring occasionally (10 minutes) or until rice is tender.
Meanwhile, on broiler pan sprayed with nonstick cooking spray, arrange chicken.
Brush chicken with 1/2 of Italian dressing.
Broil, turning chicken once and brushing with remaining dressing, for 10 minutes or until chicken is done.
Stir basil into rice mixture; arrange chicken over rice.
