Chicken Basque Recipe
Ingredients
3 pounds chicken parts
2 tablespoons shortening
Salt and pepper
2 cans (10 3/4 ounces each) condensed tomato soup
1/4 cup Chablis or other dry white wine
4 cups eggplant strips, 3/4 inch thick (1 large eggplant)
1/2 pound mushrooms, quartered
1/2 cup diced cooked ham
1/2 cup chopped green pepper
2 medium cloves garlic, minced
1/8 teaspoon pepper
1 medium bay leaf
Directions
In large skillet, brown chicken in shortening.
Transfer to 3-quart casserole; sprinkle with salt and pepper.
Pour off fat in skillet; stir in soup and wine.
Mix in remaining ingredients; pour over chicken.
Cover; bake at 350° F. for 1 hour.
