Chicken Basque Recipe

Are you looking for a special Chicken Basque recipe? Chicken is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. My friends tried this Chicken Basque the other day and they simply adored it. Do I need to say more?

Ingredients

 
5 chicken breasts
 
4 tablespoons butter
 
2 1/2 teaspoons tarragon
 
2 1/2 teaspoons oreg ano
 
1/2 teaspoon salt
 
1/2 teaspoon pepper
 
1/4 teaspoon dried hot red pepper
 
2 tablespoons parsley
 
2 stalks celery, chopped
 
1 yellow onion, chopped
 
1 red pepper, chopped
 
1 green pepper, chopped
 
2 zucchini, chopped
 
2 tomatoes, chopped
 
1/4 cup all-purpose flour

Directions

1. Preheat oven to 350°F.
2. Mix butter, 2 teaspoons tarragon, and 2 tea spoons oregano.
3. Rub butter mixture over chicken; season with salt and pepper. Place in casserole. Roast for 2 hours, basting several times.
4. Meanwhile cook vegetables. Heat 2 tablespoons butter in a frying pan. Add celery and onions and saute till transparent. Add 1/2 teaspoon oregano, 1/2 teaspoon tarragon, red pepper, and parsley. Mix well.
5. Add peppers, zucchini, and tomatoes and pour over chicken 10 minutes before cooking time is up.
