Chicken Avocado Salad Recipe

Ingredients
3 tablespoons frozen orange juice concentrate
1 tablespoon sugar
1 tablespoon vinegar
1/8 teaspoon dry mustard
Few drops bottled hot pepper sauce
1/4 cup mayonnaise or salad dressing
2 cups cubed cooked chicken
1 cup bias-sliced celery
1/2 cup sliced pitted ripe olives
2 medium avocados, peeled,pitted, and sliced
2 medium oranges, peeled and sectioned Leaf lettuce
1/4 cup slivered almonds, toasted(optional)
Directions
For dressing, in large mixing bowl stir together orange juice concentrate, sugar, vinegar, dry mustard, pepper sauce, and dash salt.
Stir in mayonnaise.
Add chicken, celery, and olives; toss lightly.
To serve, arrange avocado slices and orange sections in individual lettuce-lined bowls.
Mound chicken mixture in center.
Sprinkle with almonds, if desired.
