Chicken & Asparagus Soup Recipe

Ingredients

 
500ml Chicken Stock
 
300g cooked chicken breast meat, finely sliced
 
100g asparagus tips, drained and chopped
 
2 tablespoons cornflour mixture
 
100g sweetcorn, drained
 
1 1/2 teaspoons salt
 
12 button mushrooms, sliced
 
1 teaspoon sesame oil to serve
 
2 spring onions, finely chopped to garnish

Directions

In a saucepan bring chicken stock to the boil.
Add the mushrooms, simmer for 2-3 minutes then stir in cornflour (cornstarch) mixture and simmer, still stirring until thickened.
Reduce heat, add chicken, asparagus and sweetcorn and heat through gently but thoroughly.
Season with salt.
