Chicken Asparagus Dolls Recipe
Ingredients
1 teaspoon crushed fresh garlic
1 tablespoon minced fresh dill, or 1 teaspoon dried
4 large boneless skinless chicken breast halves (6 ounces each), pounded to 1/4-inch thickness
16 fresh asparagus spears, trimmed
1/4 cup dry white wine or chicken broth
2 whole wheat submarine-sandwich rolls, each 6 inches long
DRESSING
1/4 cup nonfat or reduced-fat mayonnaise
1/4 cup nonfat sour cream
2 tablespoons grainy Dijon mustard
1 teaspoon minced fresh dill, or 1/3 teaspoon dried (garnish)
Directions
1. Spread the garlic and dill over 1 side of each chicken breast. Top each breast with 4 asparagus spears, roll the chicken around the spears, and secure with a wooden toothpick.
2. Pour the wine or chicken broth into the bottom of a microwave or stove-top steamer, and arrange the chicken rolls in the steamer. Cover and cook on high power or over medium-high heat for 12 to 15 minutes, or until the chicken is opaque and tender.
