Chicken Apple Saute Recipe
Ingredients
| 1 tablespoon corn oil or safflower oil | ||
| 1 pound chicken breasts, skinned, boned and cut into strips | ||
| 1 cup celery, diagonally sliced | ||
| 1 medium green bell pepper, sliced lengthwise | ||
| 1 medium onion, sliced lengthwise | ||
| 1 Golden Delicious apple, cored and sliced | ||
| Apple Juice | 1/2 Cup (16 tbs) | |
| White wine vinegar | 1 Tablespoon | |
| Cornstarch | 1 Tablespoon | |
| 1 teaspoon lite soy sauce | ||
Directions
In a wok or nonstick skillet heat oil over medium heat.
Add chicken.
Saute over medium-high heat until cooked through.
Remove chicken.
Add celery, green pepper and onion.
Stir-fry until tender-crisp.
Add chicken and apple.
Stir-fry for 1 minute.
In a small bowl combine apple juice, vinegar, cornstarch and soy sauce.
Add to chicken.
Cook until thickened, stirring constantly.
Add chicken.
