Ingredients

 Olive oil2 Tablespoon
 Celery ribs4
 Large onion - 1, chopped
 Garlic4 Clove (5gm)
 Green pepper1 To taste
 Fakin' Bacon - 1 6-ounce package, chopped
 Boneless chicken - 2 cups, bite-sized pieces
 Raw short-grain brown rice - 1 cup
 Tomatoes2 Cup (16 tbs), chopped
 Clam Juice8 Bottle (1l)
 Water1 Cup (16 tbs)
 Thyme1/2 Teaspoon
 Bay leaves3
 Shrimp - 1/2 pound, shelled and deveined
 Scallions1 Bunch (100gm)
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1. In a large skillet add olive oil and warm.
2. Add garlic, pepper, celery and onion. Saute well.
3. Combine vegetables,chicken and bacon. Cook till it turns brown and is tender.
4. Add rice. Stir for 2 minutes.
5. Add tomatoes and liquid. Mix clam juice, bay leaves, thyme and water.
6. Simmer for 45 minutes keeping rice covered.
7. Add shrimps. Cook till the shrimps turn light pink in color.
8. Add green onions and stir.

FINALIZING
9. Taste and adjust the seasonings.

SERVING
10. Serve Chicken And Shrimp Jambalaya hot.
