 3 1/2 lbs chicken, cut in 8 pieces
 Olive oil2 Tablespoon
 Onion1 , sliced
 Garlic2 Clove (5gm), smashed
 2 yellow peppers, cubed
 Plum tomatoes6 , quartered
 Saffron1/4 Teaspoon
 Dry white wine1 Cup (16 tbs)
 Butter1 Tablespoon
 Pinch of crushed chilies
 Salt To Taste
 Pepper To Taste

Directions

Remove skin from chicken.
Heat half of oil in frying pan. Add onion and garlic; cook 4 minutes. Add peppers, tomatoes, crushed chilies and saffron. Season, mix and cook 5 minutes.
Pour in wine and cook 6 minutes over low heat.
Meanwhile, heat remaining oil with butter in saute pan over medium heat. Add chicken pieces, season and cook 8 minutes. Turn pieces over and continue cooking 6 minutes.
Remove chicken breasts from pan and keep hot in oven. Continue cooking remaining pieces another 8 minutes.
Serve chicken with plum tomato mixture.
