Chicken And Plum Tomatoes Recipe
|Chicken||3 1⁄2 Pound, cut into 8 pieces|
|Olive oil||2 Tablespoon|
|Onion||1 , sliced|
|Garlic||2 Clove (10 gm), smashed and chopped|
|Yellow peppers||2 , cubed|
|Plum tomatoes||6 , quartered|
|Dry white wine||1 Cup (16 tbs)|
|Crushed chilies||1 Pinch|

Heat half of oil in frying pan. Add onion and garlic; cook 4 minutes. Add peppers, tomatoes, crushed chilies and saffron. Season, mix and cook 5 minutes.
Pour in wine and cook 6 minutes over low heat.
Meanwhile, heat remaining oil with butter in saute pan over medium heat. Add chicken pieces, season and cook 8 minutes. Turn pieces over and continue cooking 6 minutes.
Remove chicken breasts from pan and keep hot in oven. Continue cooking remaining pieces another 8 minutes.
Serve chicken with plum tomato mixture.
