Chicken And Melon Casserole Recipe
Ingredients
3 tbsp (45 ml) butter
2 chicken breasts, skinned, halved, boned, and cut in large pieces
1 tbsp (15 ml) chopped parsley
1 tsp (5 ml) tarragon
1 celery stalk, sliced
20 mushrooms, halved
3 tbsp (45 ml) flour
1 1/4 cups (300 ml) beer
1 cantaloupe melon, cut in half
Salt and pepper
Directions
Place butter and chicken in casserole.
Add parsley, tarragon, celery, salt and pepper.
Cover and microwave 6 minutes.
Add mushrooms and mix in flour; pour in beer.
Microwave 6 minutes uncovered.
Using melon-ball cutter, scoop out melon flesh and add to casserole.
Mix very well and finish microwaving 1 minute uncovered.
Add parsley, tarragon, celery, salt and pepper.
Cover and microwave 6 minutes.
Add mushrooms and mix in flour; pour in beer.

Using melon-ball cutter, scoop out melon flesh and add to casserole.
